- Black beans: If you don’t have black beans, you can easily substitute any bean you have on hand. For the most nutrition, I like to use dried beans! Simply soak them overnight, then cook in a slow cooker or simmer on the stovetop. Totally optional though!
- Fire-roasted diced tomatoes
- Frozen corn
- Chipotle peppers in adobo sauce
- Adobo sauce: If you don’t have any on hand, you can make your own.
- Cumin, salt, and black pepper
- Chicken: You can use cooked chicken breast or rotisserie chicken.
- Sour cream: You can also use blended cottage cheese or Greek yogurt to increase the protein content, if that’s your thing.

Chipotle Chicken Soup
This hearty chipotle chicken soup combines tender chicken, fire-roasted tomatoes, and black beans in a creamy, smoky broth.
Ingredients
- 1 large onion, chopped
- 1 tablespoon avocado or olive oil
- 4 garlic cloves, minced
- 4 cups chicken bone broth or cooking broth
- 2 cans (15 ounces each) black beans, rinsed and drained
- 2 cans (14-1/2 ounces each) fire-roasted diced tomatoes, undrained
- 3 cups frozen corn
- 2 chipotle peppers in adobo sauce, seeded and minced
- 2 teaspoons adobo sauce
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups cubed cooked chicken breast or rotisserie chicken
- 1/2 cup sour cream
- Optional toppings: fresh cilantro, crushed corn chips, diced jalapeños, sour cream, shredded cheese
Instructions
- Add oil to a Dutch oven or large pot over medium heat. Add the diced onion and garlic and cook until the onion is translucent and the combination is fragrant.. Add the broth, canned black beans, canned tomatoes in their juices, frozen corn, chipotle peppers, adobo sauce, cumin, salt, and pepper to the pot.
- Bring to a boil, then reduce heat and simmer uncovered for 20 minutes to allow flavors to meld together.
- Add the cooked chicken and heat it thoroughly for about 7 minutes or so.
- Stir in the sour cream, then serve with toppings, as desired!
Notes
- Leave the sour cream out of the pan for a more broth and tomato base, and simply add it to individual bowls.
- Add zucchini, bell peppers, and diced sweet potatoes, and use vegetable broth for vegetarian versions.
